A winter lunch

Having eaten way to many rich and sweet foods during the last holiday. I decided it was time to eat more sensibly. So we had a fresh kale salad with shredded carrots, toasted bread crumbs, and chopped chives. Drizzle with a little buttermilk dressing~ fantastic and hit the spot. Everyone liked it!
